A santoku is a shorter, flatter double-bevelled all-purpose knife for the three tasks: meat, fish and vegetables.

What it is for

Everyday home cooking with a straight-down chopping motion and easy control.

Choosing a size

Length is about your board and your reach. Common lengths for this type: 165 · 180 mm.

Steel

White and Blue carbon steels take the keenest edge and are easy to sharpen but react to moisture; VG10 and stainless-clad are more forgiving for daily use. See the steel guide →

Bevel & left-handed use

Double bevel — works the same in either hand. Left-handed options available — ask us.

The only way to really decide
